  • 2 cups water or chicken broth
  • 2 (15 oz) cans black beans (drained)
  • 1 onion (diced)
  • 15 oz creamed corn
  • 1 cup salsa
  • 2 small jalapeños (diced)
  • 1 tsp chili powder
  • 1/3 cup ranch dressing
  • 4 oz cream cheese

Instructions

  1. Place chicken breasts at the bottom of the Instant Pot and pour in water or broth. Sprinkle with salt.
  2. Add diced onion, black beans, creamed corn with juices, salsa, and jalapeños. Stir gently to combine.
  3. Sprinkle in chili powder and cayenne pepper; stir well.
  4. Top with ranch dressing and cream cheese.
  5. Seal the lid and cook on high pressure for 25 minutes. Allow natural release for 10 minutes before manually releasing remaining pressure.
  6. Shred the chicken inside the pot using two forks and stir to combine.
