  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract

  • 1 jar vegan marshmallows creme
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cake mix, eggs, and oil until combined.
  3. Drop spoonfuls of dough onto prepared baking sheets about 2 inches apart.
  4. Bake for 8-10 minutes until edges are set but centers remain soft. Cool on wire rack.
  5. For frosting, beat butter until creamy; gradually add powdered sugar, vanilla, and salt until combined. Fold in marshmallows creme.
  6. For ganache, microwave heavy cream over chocolate chips for about 45 seconds; whisk until smooth and let cool slightly.
  7. Frost cooled cookies with marshmallows frosting and drizzle with ganache.
  8. Optional: Pipe reserved frosting in squiggles on top for decoration.
