  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions for garnish

Instructions

  1. Cook the rigatoni in salted water until al dente. Drain, reserving 1/2 cup of pasta water.
  2. In a skillet, heat olive oil over medium-high heat and sauté seasoned chicken until golden brown (about 5-7 minutes). Set aside.
  3. In the same skillet, add remaining olive oil and carrots; sauté for 3-4 minutes. Add minced garlic and cook until fragrant.
  4. Lower heat and stir in butter, honey, soy sauce, and black pepper; simmer for 2-3 minutes.
  5. Return chicken to the skillet with veggies, then mix in rigatoni. Adjust sauce consistency with reserved pasta water as needed.
  6. Serve warm topped with green onions.
