  • 1/2 cup smooth peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, baking soda, and salt.
  2. In another bowl, beat softened butter and brown sugar until fluffy. Add peanut butter and mix well.
  3. Incorporate the egg and vanilla extract into the peanut butter mixture until combined.
  4. Gradually add dry ingredients to the wet mixture, stirring just until blended.
  5. Roll dough into tablespoon-sized balls and coat in sugar before placing on a parchment-lined baking sheet.
  6. Bake for about 10 minutes until edges are lightly golden; cool slightly on the sheet before transferring to a wire rack.
  7. For the filling, beat together softened butter, peanut butter, powdered sugar, milk, and vanilla extract until creamy.
  8. Once cooled, spread or pipe filling between two cookies.
