  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat oven to 375°F. Arrange three tortillas on two lightly greased baking sheets and bake for 3-5 minutes until crispy.
  2. In a skillet, cook the ground beef over medium-high heat until browned. Drain excess grease.
  3. Stir in taco seasoning and water; bring to a boil then simmer for 10 minutes.
  4. Warm refried beans in the microwave for 1-2 minutes.
  5. Layer each baked tortilla with refried beans, ground beef mixture, enchilada sauce, cheese, tomatoes, green onions, and olives.
  6. Repeat layers until all ingredients are used.
  7. Bake for an additional 5 minutes or until cheese is bubbly.
