  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed)
  • 6 cups vegetable stock
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • Fresh herbs: thyme, parsley
  • Seasonings: smoked paprika, apple vinegar, salt, black pepper

Instructions

  1. Sauté diced onion and sliced carrots in a pot until translucent.
  2. Add minced garlic and rinse jackfruit; stir in with thyme sprigs and apple vinegar.
  3. Whisk whole wheat pastry flour with vegetable stock; pour into the pot.
  4. Simmer for about 45 minutes until jackfruit is tender.
  5. Stir in gnocchi, diced tomatoes, and thawed peas; cook until gnocchi floats.
  6. Remove thyme sprigs; season with salt and pepper before serving.
