  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 1 liter chicken stock
  • 250g cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • Bay leaves
  • Fresh thyme

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Add the leeks, carrots, celery, and thyme; sauté for about 5 minutes until softened.
  2. Stir in the garlic and cook for another minute. Sprinkle flour over the vegetables and combine well.
  3. Gradually pour in the chicken stock while scraping any bits from the bottom of the pot.
  4. Add potatoes, cooked turkey, and bay leaves; season with salt and pepper.
  5. Cover and transfer to a preheated oven at 180°C/350°F for about 45 minutes to allow flavors to meld.
