  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme leaves
  • Fresh chopped parsley (for garnish)

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Cook the bacon until crispy, then drain excess fat, leaving about 2 tablespoons in the pot.
  2. Add leeks, carrots, celery, and thyme; sauté for about five minutes until softened. Stir in the garlic and cook for one more minute.
  3. Sprinkle in the flour and mix well. Gradually add chicken stock while scraping the bottom of the pot to incorporate all flavors. Season with salt and pepper.
  4. Add potatoes, cooked turkey, and bay leaves. Cover and bake in a preheated oven at 350°F (180°C) for about 45 minutes.
  5. If desired, stir in heavy cream before serving. Garnish with fresh parsley.
