  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 tsp garlic, minced
  • 1 lb ground turkey
  • 1 Tbsp brown sugar
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth (or vegetable broth)
  • 28-ounce can fire roasted crushed tomatoes
  • 15-ounce can kidney beans, rinsed and drained
  • 15-ounce can black beans, rinsed and drained
  • 15-ounce can pinto beans, rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onions and minced garlic for about 3-4 minutes until softened.
  2. Add ground turkey, breaking it apart as it cooks for about 5-7 minutes until fully browned.
  3. Stir in brown sugar, chili powder, cumin, oregano, salt, black pepper, and tomato paste until well combined.
  4. Pour in beef (or vegetable) broth, crushed tomatoes, and all prepared beans. Bring to a boil while stirring occasionally.
  5. Reduce heat to low and let simmer uncovered for about 30 minutes. Stir often; add water if needed for desired consistency.
