  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 large zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small red onion
  • 1 cup cherry tomatoes
  • 1 can (15 oz) chickpeas
  • Fresh parsley for garnish
  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water; combine it with water and half a teaspoon of salt in a saucepan. Bring to a boil, then cover and reduce heat. Cook for 15-20 minutes until tender.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Toss zucchini, bell peppers, onion, and cherry tomatoes in olive oil, salt, oregano, smoked paprika, and black pepper.
  4. Grill the vegetables for about 5-7 minutes on each side until tender.
  5. In a bowl, combine grilled veggies with chickpeas and cooked quinoa. Stir in fresh parsley and lemon juice.
  6. Serve warm with optional feta cheese on top.
