  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, whisk together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined—avoid overmixing!
  5. Scoop the batter into lined muffin tins, filling each cup about two-thirds full.
  6. Bake for about 18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the tin for a few minutes before transferring them to a wire rack.
