Scale
  • 2 lbs boneless skinless chicken thighs
  • 1 cup soy sauce (or gluten-free soy sauce)
  • 3/4 cup brown sugar
  • 1/2 cup pineapple juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch (for sauce)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, pineapple juice, garlic, ginger, and sesame oil until sugar dissolves.
  2. Pour the marinade over chicken thighs in a bowl or zip-top bag. Seal tightly and refrigerate for at least 1 hour or overnight for deeper flavor.
  3. In a saucepan, bring leftover marinade to a boil; reduce to simmer. Mix cornstarch with water and stir into the sauce until thickened.
