  • 1/4 tsp ginger powder
  • 1/4 tsp salt
  • 1/2 tbsp olive oil
  • 1 large chicken breast
  • 3/4 cup fresh pineapple pieces
  • 6 cups chopped romaine lettuce
  • 1/2 avocado
  • 1/2 red onion
  • 1/2 cup cherry tomatoes
  • 1 1/2 cups cooked quinoa
  • 1 1/2 tbsp lime juice
  • 2 1/2 tbsp olive oil
  • 2 tbsp finely chopped cilantro
  • 1/2 tsp honey
  • 1/4 tsp salt
  • Black pepper to taste

Instructions

  1. Marinate chicken: Combine marinade ingredients and let chicken marinate for at least 3 hours; overnight is ideal.
  2. Prepare dressing: Shake all dressing ingredients in a jar and let sit for 15 minutes.
  3. Cook chicken: Sear marinated chicken in olive oil over high heat until golden brown, about 3 minutes per side. Let rest under foil.
  4. Sear pineapple: In the same skillet, sear fresh pineapple pieces until golden.
  5. Assemble salad: Arrange romaine, avocado, onion, tomatoes, quinoa, sliced chicken, and seared pineapple on a platter.
  6. Serve: Drizzle with dressing just before serving.
