  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté for 2-3 minutes until fragrant.
  2. Add ground turkey to the skillet and cook until browned (about 5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
  3. Stir in diced red bell pepper and spinach; cook for an additional 2-3 minutes until veggies are tender.
  4. Boil diced sweet potatoes in a separate pot until tender (approximately 10 minutes); drain well.
  5. In a baking dish, layer cooked sweet potatoes followed by the turkey mixture. Pour chicken broth over the top.
  6. If using cheese, sprinkle it on top before baking at 375°F for about 15-20 minutes until bubbly.
  7. Allow to cool slightly before serving and enjoy!
