  • 1/2 onion
  • 1 jalapeno pepper
  • 1 garlic clove
  • 1 teaspoon kosher salt

Instructions

  2. Remove the husks from tomatillos and wash them thoroughly. Cut the onion into quarters and the jalapeno into pieces.
  3. Arrange the tomatillos, onion, and jalapeno on a baking sheet. Roast for 20 to 30 minutes until soft and slightly charred.
  4. Allow cooling for about 10 minutes, then transfer to a blender along with the garlic and salt. Blend until smooth.
  5. Taste and adjust seasoning if necessary before storing in an airtight container.
