  • 2 cups chicken broth (or vegetable broth)

  • ½ cup fresh lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine the potatoes with chicken broth, olive oil, lemon juice, minced garlic, oregano, paprika, and salt. Toss until well coated.
  4. Cover the pan with foil and roast for 40 minutes.
  5. Remove from the oven, toss the potatoes, cover again, and roast for an additional 25 minutes until fork-tender.
  6. Uncover and roast for another 15 minutes to achieve a crispy exterior.
