  • 1/3 cup cornstarch
  • 2 cups pink grapefruit juice
  • 3/4 cup water
  • 3 large egg yolks, lightly beaten

  • 1/2 teaspoon lemon extract
  • 3 large egg whites, room temperature
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar

Instructions

  1. Prepare the crust by rolling out dough and refrigerating it for 30 minutes before baking at 425°F for about 20-25 minutes.
  2. In a saucepan, mix sugar and cornstarch, then add grapefruit juice and water. Cook until thickened, temper egg yolks with hot filling, then combine and cook again briefly before pouring into the baked crust.
