  • 1 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large egg yolks
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 375°F (190°C). Roll out your pie crust into a 9-inch pan, crimp the edges, poke holes with a fork, line with parchment paper, and fill with weights. Bake for about 15 minutes.
  2. Remove weights and parchment; bake for an additional 5–7 minutes until golden brown. Cool completely.
  3. In a saucepan over medium heat, combine evaporated milk, granulated sugar, brown sugar, and egg yolks. Stir constantly until thickened (about 10 minutes).
  4. Remove from heat; stir in butter, vanilla extract, shredded coconut, and chopped pecans. Cool slightly before spreading into the baked crust.
  5. Heat heavy cream until simmering; pour over chopped chocolate and let sit for two minutes before stirring until smooth.
  6. Pour ganache over the filling; chill for at least two hours until set. Let sit at room temperature for ten minutes before serving.
