  • 1 large bulb of Garlic
  • 1.3kg / 2.8lb Baking Potatoes
  • 5 tbsp / 75g Butter
  • 2 tbsp Heavy Cream
  • 60g / 3/4 cup freshly grated Parmesan
  • 4 large Egg Yolks
  • Olive Oil
  • Salt & Pepper

Instructions

  1. Preheat your oven to 180°C/356°F. Roast the garlic wrapped in foil with olive oil for 50-60 minutes until soft.
  2. Peel and boil diced baking potatoes in salted water until fork-tender (15-20 minutes). Drain and let them steam dry.
  3. Mash the potatoes with melted butter and cream until smooth. Stir in roasted garlic and Parmesan, seasoning with salt and pepper.
  4. Allow to cool slightly before mixing in egg yolks one by one.
  5. Pipe the potato mixture onto a lined baking tray and drizzle with melted butter.
  6. Bake at 200°C/400°F for 15-20 minutes until golden brown.
