  • Black pepper & sea salt (to taste)
  • Pinch of cayenne pepper
  • 1 medium head of broccoli (cut into small florets)
  • 1/3 cup vegetable broth
  • 1 (15 oz) can of chickpeas (rinsed and drained)
  • Cooked rice of choice (for serving)
  • 1/2 cup of water
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Heat oil in a pan over medium heat. Add onion, garlic, ginger, and spices; sauté for 3–4 minutes.
  2. Add broccoli florets and vegetable broth; cook until broccoli is tender yet crisp (about 10 minutes).
  3. In a bowl, mix water, soy sauce, rice vinegar, maple syrup, and cornstarch until smooth.
  4. Pour the sauce into the pan along with chickpeas; stir to combine.
  5. Bring to a boil and simmer until the sauce thickens slightly.
  6. Taste and adjust seasonings as desired before serving over cooked rice.
