Ingredients

  • Coleslaw mix (16 oz)
  • Black beans (15 oz, rinsed and drained)
  • Canned corn kernels (1.5 cups)
  • Jalapeño pepper (1 medium, seeded and diced)
  • Red bell pepper (1 small, diced)
  • Green onions (3, sliced)
  • Fresh cilantro (¼ cup, chopped)
  • Taco seasoning (1 tbsp)
  • Ground cumin (½ tsp)
  • Chili Cheese Fritos (9.75 oz)
  • Sour cream (½ cup)
  • Mayonnaise (½ cup)
  • Fresh lime juice (¼ cup)
  • Chipotle sauce (2 tbsp)

Instructions

  1. In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss until well mixed.
  2. In another bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the coleslaw mixture; gently stir to coat all ingredients.
  4. Add all but a handful of Fritos to the salad; fold them in carefully.
  5. Before serving, top with the reserved Fritos to maintain their crunch.
  6. Enjoy immediately!
