  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar for jam
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the tartlet shells by cutting the Pâte Sucrée dough into 12 portions and pressing them into individual tartlet pans. Freeze for 30 minutes.
  2. Preheat the oven to 375°F. Prick each shell with a fork, line them with parchment paper, fill with pie weights, and bake for 10-15 minutes until golden brown.
  3. For the strawberry jam, combine chopped strawberries and sugar in a saucepan over medium heat. Simmer until thickened, about 20 minutes.
  4. To make the pastry cream, heat sweetened condensed milk, whole milk, and heavy cream in a saucepan until simmering. Whisk egg yolks and cornstarch together; mix into the hot milk mixture until thickened.
  5. Assemble the tartlets: spread strawberry jam in each cooled shell, pipe pastry cream on top, and garnish with halved strawberries.
