  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • Fresh Parsley (chopped)

Instructions

  1. Prepare the onions: Heat olive oil in a skillet over medium heat. Sauté thinly sliced onions for 30–40 minutes until caramelized, stirring occasionally.
  2. Create the béchamel sauce: In the same skillet, melt butter over low-medium heat. Whisk in flour and gradually add heavy cream to form a smooth sauce.
  3. Combine: Stir two-thirds of the caramelized onions into the sauce along with seasonings and Parmesan cheese. Cook cavatappi until al dente; combine with the sauce.
  4. Bake: Transfer pasta mixture into a baking dish, top with remaining onions and breadcrumbs. Bake at 350°F (175°C) for 10–15 minutes until golden.
