  • 2½ tablespoons salted butter
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 pounds yellow onion, halved and thinly sliced
  • 1½ tablespoons thyme, finely chopped
  • 6 cloves garlic, minced
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock, low sodium
  • 24 ounces gnocchi, store bought
  • 1½ cups gruyere cheese, freshly grated
  • ½ cup parmesan cheese, freshly grated

Instructions

  1. Heat olive oil and butter over medium heat in a skillet. Add sliced onions and cook slowly for 45-60 minutes until caramelized.
  2. Stir in fresh thyme and minced garlic; cook for 2 minutes until fragrant.
  3. Deglaze the pan with white grape juice; simmer until reduced by half.
  4. Sprinkle in flour and mix well; add Dijon mustard and Worcestershire sauce.
  5. Pour in beef stock and add a bay leaf; season with salt and pepper, simmering for 6-7 minutes.
  6. Boil salted water for gnocchi; cook until they float, then drain and mix into the sauce.
  7. Top with grated cheeses and broil until bubbly, about 3-5 minutes.
  8. Serve hot, garnished with fresh thyme.
