  • ¼ cup unsalted butter (melted)
  • 2 cups sharp cheddar cheese (shredded)
  • 1½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth
  • 2 large yellow onions (thinly sliced for topping)
  • Vegetable oil for frying

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet, melt ¼ cup butter over medium heat. Sauté diced onion and minced garlic until translucent.
  4. In a large bowl, mix thawed hash browns, sour cream, cheddar cheese, sautéed onions and garlic, flour, salt, black pepper, cayenne pepper, chicken broth, and whole milk until well combined.
  5. Spread the mixture in the prepared baking dish and bake for about 50 minutes until golden brown.
  6. While baking, heat vegetable oil in a pan and fry sliced onions until golden brown.
  7. Remove the casserole from the oven and top with crispy onions; return to oven for an additional few minutes.
