  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling or cooked Morello cherries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat egg yolks and sugar until pale and thick.
  3. Sift together cocoa powder, flour, baking powder, and salt.
  4. Whip egg whites until stiff peaks form.
  5. Gently fold dry ingredients into yolk mixture, then incorporate whipped egg whites carefully.
  6. Spread batter evenly in the prepared pan and bake for 10–12 minutes.
  7. Invert onto a powdered sugar-dusted towel and roll up while warm; let cool completely.
  8. Whip together cream, powdered sugar, and vanilla until stiff peaks form.
  9. Unroll the cake gently, spread whipped cream over it, add cherry filling, then re-roll without the towel.
  10. Frost with remaining whipped cream and garnish as desired.
  11. Chill for at least an hour before slicing.
