  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1/4 tsp cayenne
  • 2 cans white beans, drained and rinsed
  • 2 lbs chicken breasts, raw (~3 large breasts)
  • 4 cups chicken broth
  • 2 4 oz cans green chiles
  • 1 can fire roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup Greek yogurt (I used 2%)
  • Cilantro (for garnish)
  • Cheddar cheese (for garnish)
  • Jalapeno (for garnish)
  • Lime wedges (for garnish)
  • Tortilla chips (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until soft; add minced garlic and spices.
  2. Mash one cup of white beans and set aside.
  3. Add chicken broth, whole and mashed beans, green chiles, fire roasted tomatoes, corn, and raw chicken to the pot. Bring to a boil.
  4. Reduce heat to low and simmer for 15-20 minutes until chicken is cooked through.
  5. Shred the chicken once cool and mix back into the pot with lime juice and Greek yogurt.
  6. Serve in bowls topped with cilantro, additional yogurt or cheese, jalapeños, and lime wedges.
