  • 1 (14-16 pound) whole turkey
  • Salt and pepper to taste
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Take the turkey out of the fridge an hour before roasting to reach room temperature.
  2. Preheat the oven to 450°F and prepare an oven rack in the bottom third.
  3. In a bowl, combine softened butter with chopped herbs, minced garlic, salt, and pepper. Mix until well combined.
  4. Remove the turkey from its packaging, check for giblets, and pat it dry.
  5. Season the turkey generously inside and out with salt and pepper; stuff the cavity with halved lemon and herb mixture.
  6. Rub the herb butter all over the skin of the turkey.
  7. Place the turkey breast-side up on a rack in a roasting pan and reduce oven temperature to 350°F.
  8. Roast for about three hours or until the internal temperature reaches 165°F.
  9. Let it rest for at least twenty minutes before carving.
