  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. If using fresh corn, grill until lightly charred; cool and cut kernels off the cob. Thaw and drain frozen corn.
  3. In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Combine cooked pasta, corn, feta cheese, cilantro, and green onion with the dressing; toss gently to coat.
  5. Taste and adjust seasoning if needed. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with additional feta cheese, cilantro, and chili powder before serving.
