  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and cool completely.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Chop turkey slices and pepperoni into bite-sized pieces. Halve cherry tomatoes and slice olives and red onion.
  4. In a large bowl, combine cooled pasta with all prepared ingredients. Pour the dressing over the salad and toss gently until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
