  • 1 pint cherry tomatoes
  • 1 cup sweet corn
  • 1 orange bell pepper
  • 1/3 cup red onions
  • 2 tablespoons minced cilantro
  • 2 tablespoons minced mint
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • Zest of one lime
  • 1 tablespoon apple vinegar
  • 12 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon EACH dried oregano, chipotle pepper, pepper, salt

Instructions

  1. In a large bowl, combine sliced cucumbers, halved cherry tomatoes, sweet corn, diced bell pepper, and red onions. Toss gently.
  2. In a separate bowl, whisk together olive oil, lime juice and zest, apple vinegar, honey, garlic powder, oregano, chipotle pepper, salt, and pepper.
  3. Drizzle the dressing over the salad and toss until evenly coated.
