  • 1 can black beans (15 oz)
  • 1 can corn (15.25 oz, undrained)
  • 1 can Rotel tomatoes (10 oz, undrained)
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 8 oz light cream cheese
  • 2 chicken breasts

Instructions

  1. Drain and rinse black beans. Place chicken breasts at the bottom of the crock pot.
  2. Add corn, Rotel tomatoes, and black beans on top of the chicken.
  3. Sprinkle cumin, chili powder, onion powder, and ranch dressing mix over the ingredients. Mix gently.
  4. Place cream cheese on top of the mixture. Cover and set crock pot to low for 6-8 hours.
  5. After cooking, shred the chicken with two forks and stir everything together before serving.
