  • 4 potatoes
  • 500 g (1 lb) chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • 1 onion (finely chopped)
  • 3 garlic cloves (crushed)
  • 1 cup chicken stock
  • 1 cup cream
  • 3 tsp Dijon mustard
  • 12 tsp lemon juice

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Peel and cube the potatoes, toss them with olive oil, salt, and pepper in a roasting pan.
  3. Roast the potatoes for about 30 minutes, tossing halfway through.
  4. Flatten chicken breasts between parchment paper and season with olive oil, salt, pepper, and oregano.
  5. Sear the chicken in a pan over medium-high heat for about 2-3 minutes per side until golden brown; set aside.
  6. In the same pan, sauté onion and garlic until fragrant.
  7. Add chicken stock; simmer before incorporating cream and Dijon mustard until thickened.
  8. Stir in lemon juice and return chicken to the pan; cook for another five minutes.
  9. Serve garnished with parsley alongside roasted potatoes.
