  • 1/2 Carrot, chopped
  • 1 small Onion, chopped
  • 1 teaspoon Grated fresh ginger root
  • 1/4 teaspoon Minced fresh garlic
  • 1 tablespoon Minced fresh chives
  • 1 cup Baby portobello mushrooms, sliced
  • 1/2 stalk Celery, chopped
  • 1 cup Chopped fresh shiitake mushrooms
  • 3 teaspoons Beef bouillon granules
  • 2 teaspoons Chicken stock
  • 2 quarts Water

Instructions

  1. Prepare the vegetables by chopping the carrot, onion, ginger, garlic, and celery. Slice baby portobello and shiitake mushrooms.
  2. In a large saucepan or stockpot, combine all chopped vegetables, chicken stock, beef bouillon granules, and water. Bring to a boil over high heat.
  3. Once boiling, cover the pot and reduce heat to medium. Simmer for about 45 minutes to meld flavors.
  4. If desired, blend for a smoother texture using an immersion blender or regular blender.
  5. Pour the cooked soup through a strainer into another pot to remove solids while keeping mushroom pieces.
  6. Serve hot in bowls topped with freshly chopped chives.
