  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg and vanilla extract; mix until well combined.
  4. Gradually incorporate the flour, salt, and baking powder without overmixing.
  5. Use a cookie scoop to portion dough onto the prepared baking sheet, flattening each ball slightly.
  6. In a separate bowl, combine filling ingredients: melted butter, brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt.
  7. Create indentations in the center of each cookie dough ball and fill with the pecan mixture.
  8. Bake for 8-9 minutes until golden around edges; let cool before transferring to a wire rack.
