  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the baking dish and drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices on top and drizzle with the remaining mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil; if using Parmesan cheese, sprinkle on top and bake uncovered for an additional 15-20 minutes until golden brown.
