  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in a greased baking dish. Drizzle with half of the balsamic mixture.
  4. Add remaining potato slices as the second layer and drizzle with the rest of the mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil; if desired, sprinkle Parmesan on top. Bake uncovered for an additional 15-20 minutes until crispy and golden.
