  • 2 sheets of thawed puff pastry
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups warm whole milk
  • 6 large egg yolks
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 tbsp cold unsalted butter
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry sheets to about 9×9 inches and prick with a fork. Bake on lined trays for 35-45 minutes until golden brown.
  2. Cool completely before trimming edges to fit an 8×8-inch pan.
  3. In a saucepan, whisk together sugar, cornstarch, and salt; mix in egg yolks until smooth.
  4. Warm milk until steaming, then slowly blend into egg mixture.
  5. Cook over medium heat while whisking until thickened. Stir in vanilla seeds and butter until smooth.
  6. Layer one piece of pastry in the prepared pan, pour custard on top, and cover with another piece of pastry. Refrigerate for at least four hours or overnight.
  7. Slice into squares and dust with powdered sugar before serving.
