  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsp tomato paste
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C). Arrange tomato wedges on a baking sheet and drizzle with olive oil. Place whole garlic bulbs among tomatoes and roast for about 30 minutes until tender.
  2. In a large pot over medium heat, sauté chopped onions until translucent (about 5-7 minutes).
  3. Squeeze roasted garlic cloves into the pot, add roasted tomatoes, vegetable stock, tomato paste, sea salt, On Everything All-Purpose Blend, and smoked paprika. Simmer gently for about 10 minutes.
  4. Stir in heavy cream and warm through without boiling. Blend until smooth using an immersion blender or countertop blender.
  5. Serve hot with your favorite side.
