  • ¾ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest (about 1 lemon)
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the crumb mixture into the bottom of the pan.
  4. In another bowl, beat softened cream cheese until smooth. Add sugar and mix well. Then add eggs one at a time, followed by lemon zest, juice, and vanilla.
  5. Pour the filling over the crust and spread evenly. Top with the remaining crumb mixture.
  6. Bake for 30-35 minutes until set but slightly jiggly in the center.
  7. Let cool at room temperature for an hour before refrigerating for at least three hours.
