  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • ½ cup shredded coconut
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.
  2. In a large bowl, cream together the softened butter until light and fluffy.
  3. Add both sugars and mix well, scraping down the sides of the bowl.
  4. Incorporate eggs and vanilla extract; mix until combined.
  5. In a separate bowl, combine flour, salt, baking powder, and baking soda; then add to the wet mixture.
  6. Gently fold in oats, corn flakes, toasted pecans, and coconut flakes.
  7. Add peanut butter chips and chocolate chips; mix until just combined.
  8. Chill dough in the refrigerator for at least one hour (or up to 24 hours).
  9. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  10. Scoop generous portions of dough onto prepared sheets, leaving space between each scoop.
  11. Bake for 12–14 minutes until golden on the edges but slightly shiny in the center.
