  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, beat softened butter and sugar until fluffy.
  4. Add eggs one at a time to butter mixture; mix well after each addition. Stir in vanilla and coconut extracts.
  5. Gradually add dry ingredients alternating with coconut milk; mix until smooth.
  6. Pour batter into prepared pans and bake for 25–30 minutes until golden brown. Cool completely.
  7. For frosting, beat cream cheese and powdered sugar until smooth, then fold in whipped heavy cream.
