  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter (for cinnamon swirl)
  • 1/3 cup light brown sugar (for cinnamon swirl)
  • 2 tbsp cinnamon (for cinnamon swirl)
  • 3/4 cup powdered sugar (for glaze)
  • 2 tbsp melted vegan butter (for glaze)
  • 2 oz softened vegan cream cheese (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mash bananas and mix in melted vegan butter, maple syrup, almond milk, and vanilla.
  3. In another bowl, whisk together baking powder, baking soda, cinnamon, salt, and flour.
  4. Gently fold dry ingredients into wet until just combined; small lumps are acceptable.
  5. Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and cinnamon in a bowl.
  6. Layer half of the batter in the loaf pan; drizzle with half of the cinnamon swirl mixture. Repeat layers and gently swirl with a knife.
  7. Bake for about 45 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack. Drizzle glaze made from powdered sugar, melted vegan butter, and softened vegan cream cheese.
