  • 1/2 cup granulated sugar

  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallow crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt; then gradually mix into wet ingredients until just combined.
  5. Fold in chocolate chips and evenly press the mixture into the prepared baking dish.
  6. Bake for about 20-25 minutes until golden brown; edges should be set while the center may be slightly soft.
  7. Once cooled, spread vegan marshmallow crème over the cookie base.
  8. Melt semi-sweet chocolate chips with coconut oil in intervals until smooth, then pour over the marshmallow layer.
  9. Allow to set at room temperature or chill until firm before cutting into squares.
