  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). Sift the dry ingredients together in one bowl while whisking the wet ingredients in another until smooth. Combine both mixtures and stir in hot water.
  2. Divide the batter between two greased 8-inch round pans and bake for about 35 minutes until a toothpick comes out clean. Cool completely.
  3. To make the mousses, warm 1 cup of heavy cream with vanilla, then whisk together egg yolks, sugar, and cornstarch in a separate bowl. Gradually combine them before returning to heat until thickened.
  4. Divide custard into two bowls—add melted dark chocolate to one and white chocolate to the other. Fold whipped cream into each mixture.
  5. Assemble by layering cake, dark mousse, white mousse, refrigerate after each layer for at least 30 minutes. Repeat until all layers are stacked.
  6. For the ganache, heat cream and pour over chopped milk chocolate; stir until smooth and pour over the assembled cake.
