Ingredients

Scale
  • 44 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 packets RapidRise yeast
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 ½ cups water
  • 6 tablespoons butter (softened)
  • 1 egg
  • 3 tablespoons softened butter (for filling)
  • 2 teaspoons ground cinnamon
  • ⅓ cup sugar (for filling)
  • ½ cup butter (softened, for icing)
  • 1 cup hazelnut spread (such as Nutella)
  • ¼ teaspoon salt (for icing)
  • 4 cups powdered sugar
  • Milk (as needed for icing)

Instructions

  1. Grease a 9×13 inch pan with butter.
  2. In a large bowl, whisk together 2 cups of flour, cocoa powder, sugar, yeast, and salt.
  3. In another bowl, combine warm water and melted butter; add to dry ingredients with an egg and mix until combined. Gradually add remaining flour until a sticky dough forms.
  4. Knead the dough on a floured surface for 4-6 minutes until smooth and elastic.
  5. Let the dough rise in a warm place for 10 minutes.
  6. Roll out the dough into a rectangle and spread softened butter over it. Mix cinnamon and sugar; sprinkle over the buttered surface.
  7. Roll tightly from one long side, cut into 12 sections, and arrange cut-side down in the prepared pan.
  8. Cover and let rise for about an hour until doubled in size.
  9. Preheat oven to 350°F (175°C) and bake the rolls for 25-35 minutes until fully cooked.
  10. Cool on a wire rack before preparing the icing by mixing softened butter with powdered sugar and hazelnut spread until smooth; adjust with milk if needed.
  11. Spread icing over rolls before serving.
