  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup sugar for custard
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. Prepare the brioche dough by mixing flour, sugar, salt, and crumbled yeast in a stand mixer. Add beaten eggs and knead. Gradually incorporate softened butter until a slightly sticky dough forms.
  2. Cover and let the dough rise in a warm place for about 2 hours until doubled in size.
  3. For the custard, heat milk with butter and vanilla pod until it bubbles. In another bowl, whisk egg yolks with sugar, cornstarch, and flour, then combine with the hot milk mixture to thicken.
  4. Roll out the risen dough into a rectangle. Spread half of the cooled custard over it and sprinkle chocolate chips. Fold and cut into rectangles, letting them rise again for 2 hours.
  5. Preheat oven to 350°F (180°C). Brush risen brioches with an egg wash and bake for approximately 10-12 minutes until golden brown.
  6. Prepare sugar syrup by boiling water and sugar together; brush on warm brioches for added sweetness.
