  • 1 pound boneless, skinless chicken breast or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh dill, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, oregano, garlic, smoked paprika, salt, and pepper in a bowl. Add chicken and coat well. Let it chill for at least 15 minutes.
  2. Cook the marinated chicken in a skillet over medium heat for about 6-7 minutes on each side until cooked through.
  3. Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper in a separate bowl.
  4. Assemble your bowls with rice or quinoa as the base topped with sliced chicken and assorted fresh veggies. Drizzle with tzatziki sauce.
