  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package directions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil and season chicken with salt and pepper. Sauté until golden brown and cooked through (about 5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté garlic for about 30 seconds until fragrant.
  4. Add Italian seasoning and stir well before pouring in diced tomatoes (with juices), chicken broth, and heavy cream. Bring to a gentle simmer.
  5. Return the cooked pasta and chicken to the skillet; toss gently to combine.
  6. Mix in shredded mozzarella until melted and creamy.
