  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • 1 cup dry long-grain white rice
  • 2 tablespoons chili powder
  • 450g cooked chicken, shredded
  • 3 1/2 cups chicken broth
  • 150 grams Monterey Jack or Havarti cheese, grated

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine diced onion, bell pepper, minced jalapeño, rice, chili powder, salt, and other spices.
  3. In a bowl, whisk together chicken broth and tomato paste until smooth.
  4. Pour the broth mixture over the rice blend in the baking dish. Add shredded chicken and stir well.
  5. Cover with aluminum foil and bake for 50-60 minutes until liquid is absorbed.
  6. Remove foil, sprinkle grated cheese on top, and bake for an additional 5-10 minutes until melted.
  7. Let cool slightly before serving topped with fresh cilantro and green onions.
